I’ve always wanted to eat at the Rio Hotel & Casino’s seafood buffet and finally had the chance to do so. Overall impression, is that the crab was overcooked, but overall food was good. Shrimp Scampi adopted from Bon Apetit magazine with slight variations. Took me 2 hours to prep & make this mean for 3… the total cost $33. Not too bad… next time though I am not going to use polenta (not a big fan of it).

Bedea & I attempted to make Honey Walnut Shrimp. We use pecans & didn’t deep fry the shrimp. Maybe I should call it Honey Pecan Shrimp. LOL! Next time we will make it better. I tasted so-so.

The whole sha-bang shrimp. 1 pound was not enough I need more like 3 pounds plus clams. LOL! Vietnamese Shrimp Gio (Basically, Shrimp papaya salad) Those are my all-time favorite shrimp dishes!
